Mini Turtles

The Botanist mini Turtles recipe, plant based, vegan, healthy, natural

I think everyone in North America knows about turtle chocolates, some pecans with caramel on top and a chocolate envelop. To be honest, for an unknown reason, we always accept when someone offer us one but at the same time, always regret it when our teeth start to get stuck for an unlimited amount of time in the caramel. Then the sugar start to give us shivers and we just have one dream, spit-out the whole thing! But we can't help ourself and continue to give the turtles a good reputation!

Here is my hack recipe that is definitely delicious and doesn't have the annoying stickiness and the sugar rush after the 1st bite !! This recipe can be enjoy guilt free all year long!

Ingredients:

200-250gr of pecans

1 cup of date paste

1/4 cup of almond meal

200gr of very good quality dark chocolate

1 tbsp of coconut oil

Method:

Cover a cooking tray with a cooking paper and put the pecans on top. Roast on a hot oven 180 degrees for 8-10 min, and take out.

Mix the date paste and the almond flour together. When the pecans have cold down, do small balls of the date blend, the size of the tip of your finger and press it on 2 pecans place side by side. Repeat until all done. Put in the freezer for about 10min.

Melt your chocolate in a double boiler with the coconut oil. Then, put a little spoon of chocolate on the top of each "turtle". When all done, put back the tray in the freezer for another 10-15min. Then you can transfer in a cookies jar. Specially in Dubai, better to keep in the fridge!
